Preparation beings month in advance at Hotel Swosti Premium, Bhubaneswar. The first step towards making the cake is the mixing process. Formally called the ‘Cake Mixing Ceremony’, a ritual religiously followed the world over and said to be a harbinger of good tidings and happiness. At Hotel Swosti Premium the Cake Mixing Ceremony is a community event. The ceremony heralds the festive season of Christmas and captures the spirit of New Year. During this ceremony, the Chefs, all the executives and sometimes even celebrity guests participate in this ritual. They marinate the dry fruits to be used in the cake, by soaking them liquor, brandy, rum and whatever other spirits, flavoring agents and other taste-makers used. The greater the duration of soaking, the better and richer is the end product. “There is no discounting the joy and cheer associated with the ritual. Cake mixing is an old tradition, ushering in the Christmas season to the hospitality industry month in advance and is one of the integral elements that go into the preparation for the festive season .Once the cake mixing ceremony is complete, thereafter, the hotel prepares in full flow for the festivities to follow……with the sole aim of spreading cheer, joy and happiness all around.” The blend consisted of dry fruits like raisins, black currents, prunes, glazed dates, cherries and candied orange and lemon rind and of course cashews, pistachios and almonds. Then come the part that everybody liked best-pouring in the liquor. Large quantities of liquor, fresh juice like orange, grape and lime and also jars of honey are generously added to soak all the mixture was tossed till all the fruits and nuts are well coated. This would soon be emptied into large vat like containers and stored away till just a couple of days before Christmas, with occasional stirring, to ensure the nuts soaks till are swollen. The sugar content of the liquor and the fruit juices helped preserve all the ingredients. Also, for the cold Christmassy weather the plum cake is the perfect energy food.
